I made Butternut Squash Carbonara with Pancetta and Sage from the February Bon Appétit yesterday!
I used the peeled and cut up Butternut Squash from TJ’s, which comes in 20 oz packages and I only bought one because I can’t read (the recipe calls for a 2 lb squash) and as a result it was a little poor on that front but still delicious. Also it was “puree via potato masher” because I don’t have a blender (or a vegetable peeler to shave pecorino over the top) and despite specifically buying linguini I grabbed the spaghetti I also had on the shelf. Again with the reading.
Despite all that it’s pretty tasty! Good job, Bon Appétit! Good job, me!
